We were all tested for celiac disease this week. Sarah and Amy tested positive. We are excited to discover new foods and to try new ways of making old favorites gluten free. We are hoping the girls feel better and can avoid any future problems that celiac could cause. The Olsens have been here for a couple days so Celestia can have eye surgery and they have given us lots of support and good ideas. (and we have had a great time together!) Heather has learned a lot since being diagnosed about a year ago and feels great now. She has helped alot and is a super example. We hope her positive attitude is contageous! Please share any recipes or suggestions you have! Thanks!

Wow Jenny! I admire your enthusiasm. I think you are wise to figure this out now, before it causes any problems. I wonder if we should have our kids tested.... hmmm.
ReplyDeleteI'm anxious to hear about the changes you make to your recipes and meal planning. I hope you blog about it. Without wheat our long term food storage is a complete joke. (With wheat it is only kind of pathetic.) Beans? Lots and lots of beans.
Jenny, you could probably put an optimistic spin on terminal brain cancer. You're amazing. Good luck with no gluten! This probably means some wide-sweeping diet changes for your family, doesn't it? Your whole standard repertoire is pretty gluten-saturated, as is everyone's. You should figure out how to grind your own rice flour and become the envy of every hippie-granola food-storage health nut in town.
ReplyDeleteOh wow! I can't believe that three of you have this! That must be a challenge! Of course, I am sure you do EXCELLENT with a challenge!! Tell Amy hi...Lacy is having surgery???
